CHICKEN ROLLS A LA RUSSE 
1 pkg. (6 oz.) Stove Top chicken flavor stuffing mix
1 1/4 c. water
2 tbsp. butter
6 chicken breast cutlets or Louis Rich turkey breast tenderloin steaks (24 oz.) pounded about 1/4 inch thick
1 egg, beaten
1/4 c. oil

Finely crush 1 cup of the stuffing crumbs; set aside. Prepare remaining stuffing mix as directed on package, reducing water to 1 1/4 cups and butter to 2 tablespoons. Spoon onto cutlets in even layer. Roll cutlets; tuck in ends. Dip rolls in egg, then in reserved crumbs. Fry in hot oil in large skillet until golden brown on all sides, about 15 minutes. Makes 6 servings, 320 calories each.
