CHICKEN SALAD WITH SWEET & SOUR
CABBAGE ON KAISER ROLLS
 
1/2 head red cabbage, shredded
1 onion, thinly sliced
1/2 c. sugar
1/3 c. red wine vinegar
2 tsp. olive oil
BLAIR pepper to taste
Salt to taste
4 c. diced, cooked chicken
3 red apples, peeled & diced
Kaiser rolls
3 spring onions, sliced
1 c. mayonnaise
1/2 c. sour cream
1 tsp. BLAIR garlic powder
1 onion, minced
2 celery stalks
2 hard-boiled eggs, chopped
BLAIR pepper to taste
Coarse grain mustard
Boston Bibb lettuce leaves

Combine all cabbage ingredients in large saucepan and cook over high heat 5 minutes. Reduce heat to medium low and simmer stirring frequently for 25 minutes. Refrigerate overnight. Stir well before using.

Combine all chicken ingredients in a large bowl. Stir well and refrigerate overnight. Stir well before using. Cut rolls in half, spread each half with mustard. Line rolls with bibb lettuce, spoon on cabbage mixture and spoon on chicken salad. Serve with chips.
