MY CHOCOLATE MOUSSE | |
3 sq. bitter chocolate 2 tbsp. butter 1/4 tsp. cream of tartar 4 egg whites 3 egg yolks 1/3 c. granulated sugar 1/4 c. granulated sugar 3 tbsp. water 2 tsp. vanilla (may substitute 1 tbsp. orange liqueur, Creme de Menthe, Kirsh, or Jamaican Rum) Put very clean beaters and small mixing bowl in freezer. Melt butter and chocolate over hot water. Put 3 tablespoons water and 1/3 cup sugar in sauce pan and bring to boil. Cool. Whip egg whites and cream of tartar in cold bowl until stiff. Pour sugar, water into bowl slowly as you whip egg whites, set aside. In a large mixing bowl mix egg yolks and 1/4 cup sugar. Add melted chocolate mix and vanilla. Slowly fold egg whites into chocolate mixture by hand, mixing only until white disappears. Pour into 4 custard cups and chill at least 1 hour. |
