QUICK CAPPUCCINO MOUSSE | |
Preparation time: 10 minutes. Serves: 4. Calories: 402 each. 3/4 c. milk 2 tbsp. instant coffee crystals 1 pkg. (6 oz.) semi-sweet chocolate chips 2 eggs 2 tbsp. brandy Cinnamon 1 c. whipping cream 1. In small saucepan, heat milk with coffee crystals just until simmering. 2. Pour hot milk into blender container. 3. Add all but 2 teaspoons chocolate chips, eggs, brandy and 1/4 teaspoon cinnamon. Blend at high speed until smooth and frothy. 4. Pour into 4 individual dessert dishes. Chill at least 3 hours or overnight. 5. Finely chop reserved chocolate chips. 6. To serve, garnish each dessert with a dollop of whipped crema. Sprinkle lightly with cinnamon and chopped chocolate or garnish with coffee beans. Serve with wafers. TIPS: Rum or orange liqueur can be substituted for brandy. Omit cinnamon and sprinkle whipped cream with nutmeg or grated orange rind. |
