KATHY'S FRIED BLACKEYE PEAS 
Approx. 3 c. cooked blackeye peas (seasoned)
1 onion (chopped fine)
2 tbsp. self-rising flour
1 egg

Mash peas with fork. Add onion, flour, and slightly beaten egg. Mix well. Drop by spoonfuls into hot oil. Cook about 2 minutes on each side or until golden brown.
