MAKE AHEAD EGG CASSEROLE BRUNCH

Long loaf of French bread, day old okay
6 eggs
4 c. milk
2 tsp. powdered mustard
1/2 onion, minced
Leftover ham, cubed or crumbled bacon 6 to 8 slices
Small can diced chilies, if desired
1 lb. grated cheddar cheese

Prepare the day before serving. Slice bread into 1 inch slices, trim crusts, and arrange close together to cover 9x13 pan. Beat together: eggs, milk, and powdered mustard. Add minced onion, ham or bacon (or both) and chilies if desired and grated cheese. Pour over bread and let set for 24 hours. Next day. Bake at 350 degrees for 45 minutes. Great for a crowd at breakfast or brunch with fresh fruit and muffins.

I love this recipe! I was looking for something that I could bake for the next day with work birthday brunch and I needed something that I had the ingredients. This turned out to be the best egg casserole. Everyone wanted the recipe. I did add Italian bacon, pancetta and that added a different flavor. Would highly recommend!

It tasted very good but I cooked it for over an hour and it was misjudged, next time I will either add more bread, eggs or cut down on the milk
