STUFFED PEPPERS WITH GROUND TURKEY | |
These are so healthy and filling that they serve 4 easily without the need for extra side dishes. 4 medium to large green bell peppers 1 1/2 t 2 lb. ground turkey 2 eggs 1 1/2 cups fresh sliced mushrooms 1/2 cup finely shredded Mozzarella cheese (I use low-fat) Preheat oven to 350°F. Mix eggs and turkey meat in a bowl. Then cook the turkey meat on medium in a deep skillet seasoning as you like. Add sliced mushrooms and keep on low heat while you prepare the peppers. Slice off the tops of the peppers and gut each one. Place desired amount of meat mixture into each pepper. Place them together tightly in an 8x8-inch pan. Sprinkle Mozzarella cheese on top of each pepper. Bake at 350°F for 20 to 30 minutes. Serves 4. Submitted by: Casey Thompson |
