OL TIMER'S ONE POT RICE DINNER | |
You can use non-organic ingredients if you want, but I can not guarantee the same taste or health benefits! 1 1/2 cups organic brown jasmine rice 3 cups organic baby kale leaves, roughly chopped 5-6 organic baby carrots, sliced or diced 4 cups organic chicken stock 1 boneless organic chicken breast, cut into 1/2-inch cubes 2/3 teaspoon salt (or to taste) some freshly ground black pepper 2 tbsp. butter or olive oil (less if you like) In a medium size pot with a lid, pour in chicken broth. Set heat to medium high to heat liquid. Add the sliced or diced carrots. Roughly chop the organic baby kale leaves and add to stock, add the 2 tablespoons butter to the pot. Pour in 1 1/2 cups of organic brown jasmine rice, salt and pepper, and cubed chicken. Stir and bring to boil. Once boil has started reduce heat to medium low (2.4 to 2.6 on electric stove). Check simmer after a few minutes and adjust heat if necessary. Mix up and replace lid, set timer for 50 to 55 minutes. You can always check the rice during cooking but it will extend the cooking time some. There may be some liquid still in pot, but that is always good sopped up with a slice of bread, your choice. Now if you want this dish in fall or winter as a soup, just add more water or chicken broth, even vegetable broth will do but it will change the flavors.
