“CHEWY PEANUT BUTTER COOKIES” IS IN:

CHEWY PEANUT BUTTER COOKIES 
1 cup (2 sticks) butter, softened
1 cup peanut butter
1 cup sugar
1 cup brown sugar, packed
2 eggs
2 cups all-purpose flour
1 tsp. baking soda
6 oz. chocolate or butterscotch chips (optional)
1/2 tsp. vanilla

Combine butter, peanut butter, sugars and eggs. Stir in baking soda and flour and remaining ingredients. Mix well and drop by the teaspoonful onto a cookie sheet, leaving 1-inch space between cookies.

Bake in a preheated 325°F oven for 10 minutes or just until set (depends upon size of cookies).

Remove to wire rack to cool. Store in refrigerator for best taste.

Makes about 50 cookies.

I just made these cookies for the first time and they're fabulous. I usually make the "cross-hatch" type of peanut butter cookies but I wanted something different. They are soft and melt in your mouth. The thing about these cookies, though, is that you really should use a timer when baking. They don't get brown except for on the bottom so timing is everything. Ten minutes is perfect.

Very yummy cookies. Just didn't taste like peanut butter. more like chocolate chip. I might adjust the amount of peanut butter next time to taste more like peanut butter cookies.

Awesome recipe! I followed it almost exactly, I used 1 tsp of vanilla and I used white chocolate chips. The cookies came out just right; 10 minutes was just enough time. Also it took me only about 10 minutes to mix all ingredients. I will be doing this one again.

These are the best peanut butter cookies I have ever tasted! They are the perfect combination of crispy and chewy. I followed the recipe precisely, except I dipped the top of each ball of dough in sugar and made the traditional criss-cross design with a fork. I halved the recipe; I was baking the cookies to send to my son at college and only wanted to make about 2 dozen. What I ended up with, however, was 51 cookies! And they were good size cookies, too--about 3 inches in diameter. That meant I was able to send him 3 dozen and I got to eat the rest myself (YUM!).

Made these with my little girl and added two instant maple and brown sugar oatmeal packets and a 1/4 cup maple and butter pancake syrup, no vanilla needed. Turned out amazing.. Really yummy!
