COLD CHICKEN SALAD 
Meat from 1 broiled chicken, cooled
2-3 c. cooked rice, cooled
2 c. light mayonnaise
1 c. sweet green peas
1/2 c. sliced almonds
1 c. chopped celery
Salt & pepper to taste

Mix all ingredients together, refrigerate. After 2 hours add more mayonnaise to taste. Will serve approximately 18 people.
