COLD CURRIED CHICKEN SALAD WITH
FRUIT & NUTS
 
1 c. mayonnaise
4 tsp. curry powder or to taste
1 lb. cooked chicken, roasted or poached, cut in 1/2" chunks
3 celery stalks, sliced in 1/8" pieces
8 bacon strips, fried crisp, drained & chopped
1/2 c. raisins
1/3 c. shredded coconut
1/2 c. unpeeled green apple, cored & cut in 1" chunks
1 lg. banana, peeled & sliced
1/3 c. chopped unsalted peanuts
1/2 c. chopped fresh cilantro or 2 tbsp. dried
Garnish: whole fresh cilantro sprigs

Granny Smith or pippin.

In a small bowl, mix together the mayonnaise and curry powder. In a large bowl lightly mix together the remaining ingredients, except the whole cilantro sprigs and then coat gently with the curry mayonnaise. Serve on a chilled platter garnished with whole cilantro sprigs. Serves 4. Total prep time: 30 minutes.
