SOUR CREAM CHICKEN ENCHILADAS | |
4 whole chicken breasts 1 c. chicken broth 2 lg. onions, chopped 1 clove garlic, minced 2 cans cooked green chilies 2 tbsp. cooking oil 1/2 pt. sour cream 2 pkg. flour tortillas Onion, pepper and garlic to taste Boil chicken until done, shred or cube and reserve 1 cup chicken broth. Saute onions, garlic, green chilies in cooking oil. Mix chicken breasts, sour cream, tortillas, onion, pepper and garlic to taste. Mix together and put chicken mixture in center of flour tortilla, roll and place in lightly greased oblong dish, using all tortillas. Cover with sauce. Combine: 1 pint sour cream and 1 cup chicken broth. Cover tortillas, top with 2 cups grated cheese. Bake at 325 degrees for 30 minutes. |
