SHERRY'S CHOCOLATE BANANA BREAD | |
1/2 cup unsalted butter, softened 2 cups flour 3/4 cup sugar 1/4 cup unsweetened cocoa powder 1 1/2 tsp. baking powder 1 tsp. kosher salt 4 oz bittersweet chocolate, melted, cooled 2 eggs 3 ripe bananas 1 tsp vanilla confectioners' sugar for dusting. Preheat oven to 350°F. Spray a loaf pan with cooking spray. Set aside. In a large bowl, mix flour, sugar, cocoa, baking powder and salt. In another bowl, beat butter until fluffy, beat in melted chocolate, eggs, bananas and vanilla. Stir in dry ingredients until just blended. Pour into pan. Bake for 50-60 minutes or until a toothpick inserted in center comes out clean. Dust with confectioners' sugar. Submitted by: Sherry Monfils |
