BANANA CHOCOLATE CHIP BREAD WITH
LIME GLAZE
 
1 1/2 cups all-purpose flour
1/4 tsp. baking powder
1/2 tsp. baking soda
3 large extra ripe bananas (mashed)
2 eggs
1 1/2 cups sugar
1/2 cup (1 stick) butter
1 tsp. vanilla extract
1/2 cup mini chocolate chips

LIME GLAZE:

1/2 cup confectioners' sugar
1 1/2 tbsp. lime juice

Preheat oven to 375°F degrees

Sift together flour, baking powder and baking soda in a mixing bowl and set aside.

In a medium bowl, mash bananas and set aside.

Hand mix together eggs, sugar and butter until nice and smooth in a separate bowl.

Add sifted ingredients to the blended egg mixture and blend together by hand with a large spoon.

Add mashed bananas, vanilla extract and chocolate chips. Pour into greased loaf pan.

Bake at 375°F for 45 to 60 minutes depending upon the size and type of pan used (glass, metal or ceramic).

While baking, mix lime juice with confectioners' sugar to create glaze.

After baking, use a pastry brush to glaze the bread while it is still warm.

Wait 20 to 30 minutes until ready to serve. Best served after completely cooled.

Makes 1 loaf.
