BLUEBERRY TEA CAKE | |
2 c. flour 2 tsp. baking powder 1/2 tsp. salt 2 c. blueberries 1/4 c. butter 3/4 c. sugar 1 egg 3/4 c. milk TOPPING FOR CAKE (add before baking) : 1/2 c. sugar 1/4 c. flour 1/4 c. butter 2 tsp. cinnamon Sift dry ingredients together. Mix butter, sugar, egg and milk (save some). Add dry ingredients, mix well. Flour berries first, then stir into batter, alternate with leftover milk. Mix topping ingredients until crumbly. Grease 9 x 11 inch pan. Batter will be thick but not stiff. Pour batter into pan, sprinkle with topping. Bake at 350 degrees for 45 minutes or until golden brown. |
