“CHEESY HASH BROWN POTATO CASSEROLE” IS IN:

CHEESY HASH BROWN POTATO
CASSEROLE
 
2 lb. hash browns, defrosted
1/2 cup (1 stick) melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 cup chopped onion
1 can cream of chicken soup
1 cup milk
1 cup dairy sour cream
2 cups grated sharp cheese (Colby or cheddar)

Mix above ingredients and put in a 9x13-inch pan.

TOPPING:

2 cups crushed corn flakes (can use Ritz crackers)
1/2 cup (1 stick) melted butter

Melt butter and add corn flakes to mix. Sprinkle topping over potatoes and bake at 350°F for 45 minutes.

Instead of the cream of chicken soup, I use Campbell's cheddar cheese soup mix (also they have a nacho one that is a bit more spicy if you like that taste). Omit the shredded cheese then add crushed potato chips for the topping.

I made this for a church potluck and it was an instant hit! Several people asked for the recipe. The only modification I would recommend is to increase the onion to 1 cup because it adds extra flavor.

I have made this recipe for years using cooked drained sausage. I serve it at my family Christmas Breakfast. Hugh hit with my family. In fact I just noted that I am going to have to makie a double recipe. I always run out of casserole. I top with cheese but I can see where some of the other toppings would be great!

This is one of my personal favorites and is great to take to any gathering. My variation is adding 1 tablespoon curry (a little more, a little less, your preference) and 1 cup chopped onion. This is a great recipe for all the variations listed. Just add more of what you and your family like. I'm going to add fresh mushrooms next time and maybe the french fried onions on top.

I didnt use the chopped onion, I added another can of cream of chicken soup and a package of kielbasa sausage. It was really good. I also didnt make a topping.

My family and friends loves this,,so I always bring it to gatherings.. I also play with the recipe alot.. Adding any kind of meat, veggies, cheese and spices.. It never tastes the same but it is always so good.. This is a no fail meal and so easy and you can eat it as a meal or add sides..Once you make it..Your hooked on it.. Give it and try and don't be scared to add your own ideas to this dish..

i didnt have hashbrowns but had a lg. bag of tatertots, i thawed them really well and crumpled them up and used those, everyone said it was the best ones i had ever made..
