“CHEESY HASH BROWN POTATO CASSEROLE” IS IN:

CHEESY HASH BROWN POTATO
CASSEROLE
 
2 lb. hash browns, defrosted
1/2 cup (1 stick) melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 cup chopped onion
1 can cream of chicken soup
1 cup milk
1 cup dairy sour cream
2 cups grated sharp cheese (Colby or cheddar)

Mix above ingredients and put in a 9x13-inch pan.

TOPPING:

2 cups crushed corn flakes (can use Ritz crackers)
1/2 cup (1 stick) melted butter

Melt butter and add corn flakes to mix. Sprinkle topping over potatoes and bake at 350°F for 45 minutes.

Using O'Bryan potatoes works well too it's got the onion and red and green peppers for color. Yummy!!!

I use one can of cream of mushroom and one can of cream of chicken. Also, add shredded cheese to the crushed corn flakes and melted butter for the topping. It gives the topping a beautiful brown and wonderful taste and texture! I've never served this without someone wanting the recipe.

Add shredded cheese on top of potatoes then sprinkle crushed potato chips on top of cheese... then bake... it really makes for a great cheesy crunchy top for this dish!!!

I have used crumbled up tater tots when the grocery store was out of hash browns it worked great and the already toasty outside added a nice texture. I also like to sprinkle french fried onions to the top of the casserole.

I crush up Lays cheddar cheese potate chips. It puts it over the top. There will not be left overs.

You must try regular Lays potato chips crushed on top. It gives the extra delight to the casserole. I also make it the night before and it yummy.

I made this recipe for years and my family loves it. I have altered the recipe and my family loves it more. What I do is use tater tots (frozen) instead of hashbrowns. I also replaced the cornflake topping by using frenchs fried onions.

Awesome recipe! It needs to bake a little longer than the recipe says. I'd say give it at least an hour. Also by adding diced ham you can make it a main dish instead of just a side!!!
