SQUASH CASSEROLE 
2 c. squash or the same in fresh squash
1 tsp. sugar
1 egg, beaten
1/2 c. mayonnaise
1 lg. chopped onion
1/2 c. diced bell pepper
1 c. grated cheese
1 stick melted butter
1 c. crushed saltines
Salt and pepper to taste

Mix all ingredients together. pour into 2 1/2 quart Pyrex or pan greased or buttered. Cook for 25 minutes at 350 degrees, longer if you want it to be browner. Also, you can use this same recipe to make an egg plant casserole.
