EGGPLANT OR SQUASH CASSEROLE 
3 c. cooked, strained and mashed eggplant or squash
1/4 c. butter
Salt and pepper to taste
1 c. milk
2 eggs, well beaten
1/4 - 1/2 c. grated onion
1 c. grated cheese
1 c. cracker or bread crumbs

Mix all ingredients together. Pour into buttered casserole.

TOPPING:

1/4 c. grated cheddar cheese
1/4 c. bread crumbs
Parmesan cheese

Mix grated cheddar cheese and bread crumbs together and sprinkle on top of casserole. Dot with butter. Lightly sprinkle Parmesan cheese on top and bake at 350 degrees until lightly brown, approximately 35 minutes.
