SALMON PATTIES 
1 (15 3/4 oz.) can salmon, drained
2 eggs, beaten
Approx. 16-20 crackers (must be enough to hold together mixture to form patties)

Using fork, mash together salmon and eggs until well mixed. Crumble crackers into mixture and blend. Form patties and place into skillet with melted butter and fry on both sides until lightly browned but crispy on edges.

If you don't have crackers, a couple tablespoons of flour works well too to hold the fish together. I like to add a dash of fresh lime or lemon.

...my Mother made these for our Catholic family on Fridays (no meat day) in grade school and high school (the 50s and 60s) until I went to Vietnam in the Navy...what a cook...never anything like 'Mom's' cooking since...it was beyond description to this day...she had a natural cooking/baking talent/ability...the 'best' Mom's are 'our' Moms!!!

Try this tip as well. Fry 8 or 10 slices of bacon untill well browned, save drippings. Crumble the bacon into your mixture, and fry patties in drippings. It adds texture and good smoky taste.

My grandmother made these with leftover mashed real potatoes instead of crackers....loved them. Don't wait too long to use the potatoes though, it will be watery!

To eliminate salmon odor while cooking . Set a small dish of vinegar next to the stove, NO ODOR. And I also like using onions in the recipe.

You can also use bread crumbs instead of crackers adds more flavor. This is how my friend taught me when she made them for her dad after school and her mom worked night turn. It was fun for the both of us! JMO

This is the way my mom made them, I had forgotten ratios and went in search of her southern cooking recipe. We ate these at least once a month back in the 50s and 60s. I made these and they were just like my mom's! She served with biscuits, green peas, mashed potatoes and white gravy. Oh my goodness. So good. Thank you for posting this, I had to search quite a few recipes before I found this. Now I know where to look.
