MY GRANDMOTHERS PANCAKES (OR
FRENCH TOAST)
 
PANCAKES:

2 cups Bisquick (or self-rising flour)
2 eggs
1 cup milk (buttermilk may be substituted)
1 tbsp. baking powder
2 tbsp. lemon juice
1/2 cup sugar (you can add more or less sugar)
2 tbsp. vanilla extract

Mix dry ingredients then add the rest. Mix with a blender on high until smooth. Fry on a griddle for the best results.

FRENCH TOAST:

Increase milk to make the batter thinner. Dip a thick cut bread in the batter then fry on a griddle. Sprinkle with confectioners' sugar, if desired.

I made a half batch of pancakes with this recipe. Reduced the sugar and added a dash of cinnamon and nutmeg. They were fluffy and delicious.
