ZUCCHINI BREAD 
3 eggs
1 1/4 c. sugar
1 c. oil
2 c. shredded zucchini
1 c. crushed pineapple
1 tbsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 tbsp. cinnamon
1 1/2 c. nuts
1 c. raisins
3 1/2 oz. flaked coconut

Beat eggs until light and foamy. Add the sugar, oil, zucchini, crushed pineapple and vanilla. Mix well. Combine flour, salt, baking soda, baking powder and cinnamon. Add to zucchini mixture. Stir. Add in nuts, raisins and coconut. Stir until well blended. Pour into 2 greased and floured pans (9 x 5 x 3 inches). Bake at 350 degrees for 1 hour.
