SOFT OATMEAL APRICOT COOKIES 
1 c shortening
1 1/2 c packed brown sugar
1/3 c molasses
3 eggs
3 c quick cooking oats
2 c all purpose flour
1 tbsp cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1 tsp baking soda
1/2 tsp salt
1 pkg. (6 oz) dried apricots (chopped)

Cream shortening and brown sugar. Beat in molasses. Add eggs, one at a time, beating well after each. Combine remaining ingredients; stir into batter. Cover and refrigerate for at least 2 hours. Shape into 1 in. balls and place 2 inches apart on greased baking sheets.

Bake at 350°F for 10 minutes.... or until browned.

Yield 7 dozen.
