CUCUMBER REFRIGERATOR PICKLES 
3 lbs. cucumbers, sliced (peelings left on)
1 lb. thinly sliced sweet onions
2 red peppers, diced
2 green peppers, diced
3 1/2 c. sugar
1/4 c. salt
2 c. vinegar (cider)

Dissolve sugar and salt in vinegar; DO NOT HEAT. Takes about 2 hours. Pour mixture over cucumber slices, onions and peppers. Let stand at room temperature overnight. Put into sterilized jars and seal. Place in refrigerator until ready to use. (Must be kept in refrigerator). They are ready to eat right away.

Makes 5 pints.

Note: When you put the juice on the cucumbers, it will appear that there is not enough juice, but when they stand overnight, more juice forms.
