MEATLOAF 
1/2 c. chopped onions
1/2 c. shredded carrots
1/4 c. chopped green pepper
2 slightly beaten eggs
1 1/2 c. soft bread crumbs (2 slices)
1 c. cottage cheese
1 tsp. salt
1 tsp. poultry seasoning
2 lbs. ground beef

In saucepan cook onions, carrots and green peppers in small amount of water, covered, about 5 minutes. Combine with slightly beaten eggs, bread crumbs, cottage cheese, salt and poultry seasoning. Add beef and mix well. Shape into 9x5x3 inch loaf pan. Bake uncovered in 350 degree oven about 1 1/2 hours. Pour off excess fat.

SAUCE FOR MEATLOAF:

1 1/2 c. catsup
3/4 c. packed light brown sugar
1 1/2 tbsp. dry mustard

In saucepan, combine catsup, brown sugar and dry mustard. Heat through and pour sauce over cooked meatloaf.
