ZUCCHINI BREAD 
3 eggs
2 c. white sugar
1 c. vegetable oil
2 c. grated zucchini
2 tsp. vanilla
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. nuts (optional)

Sift dry ingredients together and set aside. Mix all other ingredients together. Add dry ingredients all at one time. Mix well; add nuts last. Pour into 2 large greased loaf pans or 3 small pans. Bake at 325 degrees for 1 hour or until done.
