OKRA AND TOMATO CASSEROLE 
Okra (fresh or frozen)
1/2 c. onion
1/4-1/2 c. bell pepper
1 lg. can tomatoes
Salt & pepper
Cornmeal

Dip okra in meal; brown quickly in hot oil. Place in a casserole; add chopped onion and bell pepper. Pour tomatoes over this mixture and bake at 400 degrees until okra is done.
