EGGPLANT CASSEROLE | |
1 eggplant, cubed 1 lg. onion, chopped 1 green pepper, chopped 1/2 lb. okra (may use 10 oz. pkg. sliced frozen) 3 lg. fresh or 1 #2 can tomatoes 1 c. cooked rice Mix all ingredients with salt and pepper to taste and 1 tablespoon sugar. Cook on top of stove for 30 minutes. Add 1 cup. Put in buttered 8 inch square casserole. Bake at 350 degrees for 15 minutes. Before baking top with grated cheese and bread crumbs. |
