ZUCCHINI BREAD 
3 eggs
1 c. oil
2 tbsp. vanilla
2 c. sugar
2 c. zucchini, grated fine
3 c. self-rising flour
3 tsp. cinnamon
1 tsp. salt
1/2 c. nuts

Beat eggs until light and foamy. Add the next 4 ingredients lightly. Add the flour, cinnamon, salt and nuts. Blend all. Pour in 9 x 13-inch pan; bake for 45 minutes to 1 hour at 350°F.
