ASHLEY'S PEANUT BUTTER BALLS | |
These are great for Easter candy eggs or Christmas candy! 1 lb. (4 sticks) butter 1 (18 oz.) jar creamy peanut butter (about 4 cups) 3 (1 lb. ea.) boxes confectioners' sugar (or less) Cream butter and peanut butter together. Mix as much of the powdered sugar as you can into the mixture, then roll into (1-inch) balls. CHOCOLATE COATING: 1 (12 oz.) pkg. chocolate chips 1 oz. paraffin wax (I buy "Gulf Wax" in the Walmart baking section) Melt wax (about an inch) and chocolate chips in a double boiler pan. Stir well, then dip balls into chocolate with toothpicks. Place on wax paper to cool. Note: You may substitute real chocolate chips and food-grade wax with 1/2 (24 oz.) bar of Almond Bark.
