CHEESE STRATA 
8 slices day-old bread
1 c. shredded cheddar cheese
4 eggs
2 c. milk
1/4 c. minced onions
1/2 tsp. prepared mustard
1 tsp. salt
1/8 tsp. pepper
Paprika

Trim crusts from bread. Place 4 slices in bottom of an 8 inch square microproof baking dish. Cover with shredded cheese. Top with remaining 4 slices of bread.

Beat eggs. Add milk, onions, mustard, salt and pepper. Mix. Pour over top of bread slices. Sprinkle with paprika and cover with plastic wrap. Let stand at least 2 hours or overnight in refrigerator.

Uncover and cook at 350 degrees (bake) for 25 to 28 minutes or until liquid is all absorbed and a knife inserted in center comes out clean. Let stand 3 minutes before serving. 4 servings.
