VEGETABLE SOUP 
3 slices bacon, diced
1/4 c. chopped onion
1 c. chopped celery
1 c. thinly sliced carrots
1 c. potatoes, diced 1/4"
3 tbsp. flour
3 c. tomato juice
1 c. water
1/2 tsp. thyme
1 cube beef bouillon
1 (8 oz.) can peas
Salt & pepper

Place onion and bacon in 2 1/2 quart casserole dish, cover, and microwave for 3 minutes, stirring twice during cooking. Add celery, carrots and potatoes, cover and microwave 10 minutes, stirring twice. Add flour, tomato juice, water, thyme, salt, and pepper. Heat, uncovered for 10 minutes, then add peas. Heat 3 minutes, then let stand 3 minutes and serve. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
