STIR-FRIED SNOW PEAS 
3/4 lb. snow peas or sugar snap peas
2 tbsp. peanut oil
1/2 tsp. salt
1/2 tsp. sugar

String peas and rinse under cold running water. Drain and dry well with paper towels or in salad spinner. Heat wok or skillet over high heat about 1 minute. Add oil and heat until hot but not smoking. Lower heat to medium and add salt and sugar, stirring a few seconds. Add snow peas or sugar snaps and stir fry continuously 1 minute. Turn into serving dish.
