OVEN - FRIED CHICKEN THIGHS 
6 chicken thighs, skinned & trimmed of fat
Milk (skim or low-fat) for soaking chicken
1/2 c. plain dry bread crumbs or cereal crumbs
1/3 c. grated Parmesan
1 tbsp. parsley flakes (dried), crumbled
1/4 tsp. ground black pepper
Vegetable oil spray for chicken, if desired

Place the thighs in a shallow bowl or pan, and cover them with the milk. Let soak 15 minutes or longer. In a shallow bowl or pie plate combine crumbs, cheese, parsley flakes, and pepper. One by one, dip the soaked chicken pieces in the breading mix, coating chicken on all sides. Set the coated chicken on a greased baking sheet. Lightly spray the chicken with vegetable oil spray, if desired. Bake in preheated 375 degree oven for about 45 minutes.

Used Italian Breadcrumbs to coat (which already has cheese and parsley in it) and it turned out moist and tender with great flavour! I put tinfoil on my baking sheet (non-shiny side up and lightly greased it with vegetable oil) and chicken didn't stick to or tear the foil...and I turned it over halfway through the cooking time. Will definitely keep this on hand for future use...

Simple recipe that pays big dividends! I used boneless/skinless chicken thighs that I had on hand, and added sour cream to my milk for a bit more tang. My herbs were oregano and basil. Since the thighs were small, I only baked them for about 25 minutes, turning them once. Omitting the cheese and using fennel seeds instead of oregano, you probably can use this method on pork chops..
