MUSHROOMS PARMESAN 
1 1/2 lbs. mushrooms
3 tbsp. chopped parsley
4 tbsp. grated Parmesan cheese
1/4 c. oil
1/2 tsp. oregano
Salt & pepper to taste
3/4 c. bread crumbs

Clean mushrooms. Place in a baking dish which you have brushed with 1 tablespoon of oil. Sprinkle with parsley, oregano, half of the bread crumbs and grated cheese. Add salt and pepper to taste. Pour the balance of oil over this. Sprinkle the balance of the bread crumbs. Bake in a moderate oven for about 25 minutes or until you see that mushrooms are tender. (If you see that the mushrooms become dry), add 1/4 cup of water and cook for about 5 minutes longer.
