CRANBERRY DATE BARS
1 (12 oz.) pkg. fresh or frozen cranberries
1 (8 oz.) pkg. dates, chopped
1 tsp. vanilla extract
2 c. flour
2 c. quick-cooking oats
1-1/2 c. packed brown sugar
1/2 tsp. baking soda
1/4 tsp. salt
1 c. butter, melted

In a saucepan, combine cranberries and dates. Cover and cook over low heat, stirring often, for 15 minutes or until berries pop. Remove from heat and stir in vanilla. Set aside.

In a bowl, combine flour, oats, sugar, soda and salt. Add butter and stir well. Press half of mixture into an ungreased, 9 x 13 inch baking dish.

Bake at 350°F for 8 minutes. Place cranberry mixture over top. Sprinkle with remaining crumb mixture and gently pat down.

Bake for another 20 to 25 minutes or until golden brown. Cool.

Orange Glaze:

2 c. confectioners sugar
2 to 3 tbsp. orange juice
1/2 tsp. vanilla extract

Combine glaze ingredients and drizzle over bars.

Makes 4 dozen.
