DATE AND OAT BARS
1/2 c. butter
1 egg
1 tsp. vanilla
1 tsp. grated orange or lemon peel
1 1/3 c. pitted dates, chopped
1 c. oats
1/2 c. whole wheat flour
1/2 c. wheat germ
1 tsp. baking powder
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. salt
2/3 c. milk
1 c. finely chopped nuts

In a bowl, with an electric mixer, beat butter with the egg until creamy. Add vanilla and grated orange or lemon peel and dates; mix well.

In a separate bowl, combine oats, flour, wheat germ, baking powder, allspice, nutmeg, cinnamon and salt. Add oat mixture to butter mixture alternately with milk, beating on low speed until blended.

Spread batter evenly into well greased 10 x 15 inch pan. Sprinkle with chopped nuts; press nuts gently into the batter. Bake in a 325 degree oven for about 25 minutes or until center feels firm to the touch and the sides pull away. Cool and cut into bars.
