APPLE DATE BARS 
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon ginger
2 cups apples, chopped and peeled
1 cup water
1 8 ounce package dates, minced
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter
1 cup brown sugar, packed
1 1/2 cups old-fashioned rolled oats

In medium saucepan, combine sugar, apples, cinnamon, ginger, water and dates. Bring to a boil and reduce heat. Simmer on low heat until thickened, about 10 minutes, stirring occasionally. Cool slightly.

Heat oven to 375 degrees F. Grease and flour 13 x 9-inch pan. Lightly spoon flour into measuring cup and level off.

In a large bowl, combine the flour, baking soda and salt.

With pastry blender, fork, or your fingertips, cut or blend in the butter until mixture is crumbly.

Stir in the brown sugar and rolled oats.

Press 3 cups of mixture evenly into a greased and floured pan. Spread evenly with filling. Sprinkle with remaining crumb mixture and press lightly.

Bake at 375 degrees F for 20 - 30 minutes or until golden brown.

Cool and cut into apple date bars.

I am going to be one of those people that tells you how great the recipe was even though I made a few minor changes. I used whole wheat flour (it was all I had, but I liked the extra flavor and texture), more apples (I wasn't paying attention when I was chopping and ended up with too much), and I added chopped walnuts to the topping (I thought a little crunch would be good. With the changes this recipe will become a new favorite, though I am sure it would be very good as is. Thanks!
