JACK'S BEER AND BRATWURST CHILI 
2 (29 oz. ea.) cans chili beans (seasoned)
1 to 2 lb. bratwurst
1 large onion, chopped
1 (28 oz.) can crushed tomatoes
2-3 tbsp. Louisiana hot sauce
1 tsp. black pepper
2 tbsp. butter
8 oz. shredded cheddar cheese (for top)
1 (six pack) beer (your favorite)

Firstly, drink one beer (for inspiration).

In a large pot, sauté 1/2 of the onions in butter then add bratwurst and brown well. Add 1/2 can beer to pot. Drink the other 1/2 (its going to go flat anyway). Cover and reduce heat, allow brats to simmer in the beer for 10 minutes (just enough time for another beer).

Remove lid and cut bratwurst into bite size chunks. Add tomatoes, chili beans, pepper, 3 or 4 dashes of hot sauce and a can of beer. Heat on medium until chili begins to bubble. Reduce heat to low and allow to simmer uncovered.

Note: The best way to judge how long to simmer is to open beer number 5 and drink it. When you and the chili have absorbed your beer (try not to get ahead of the Chili) it's ready to eat.

Serve with chopped onions and cheese on top. Season to your level of hot with the hot sauce and of course- Drink the last beer.
