SWEET POTATO CASSEROLE 
2 1/2 c. sliced apples
4 cooked sm. sweet potatoes
1/3 c. seedless raisins
1/2 c. firmly packed light brown sugar
Dash of ground nutmeg
3 tbsp. currant jelly or apple jelly
3 tbsp. prepared mustard
4 (3/4 inch thick) center cut pork chops
Salt and pepper to taste

Divide apple slices and put in each end of shallow baking dish. Cut sweet potatoes into thick slices and put in center of dish. Sprinkle with raisins then brown sugar and nutmeg.

Mix jelly and mustard, beating until smooth.

Trim excess fat from chops. Place chops over sweet potatoes and apples. Top with jelly-mustard mixture. Sprinkle with salt and pepper. Bake in preheated oven at 350 degrees for 1 1/2 hours, or until tender.

This was really good. I used very thick pork chops and only baked for 1 hour and 15 minutes. The meat was a little drier than I would have liked. No one new that I substituted strawberry jam for the Currant jelly. :)
