SPICY BAKED CHICKEN 
1 1/2 lb. chicken breast halves
1/3 c. fine dry bread crumbs
2 tbsp. snipped parsley
3/4 tsp. dried Italian seasoning
1/2 tsp. salt
1/3 tsp. ground red pepper
1/4 c. all-purpose flour (optional)
3 tbsp. skim milk
nonstick cooking spray

In a mixing bowl, combine bread crumbs, parsley, Italian seasoning, salt and ground red pepper. Put flour in a plastic bag. Place milk in a shallow bowl. One at a time, put chicken pieces in the bag and shake to coat. Dip in milk and then into crumb mixture, pressing lightly to coat well. Place chicken pieces in a baking dish lined with nonstick spray.

Bake at 375°F for 45 to 55 minutes or until chicken is no longer pink.

Serves 4.
