OVEN-BAKED CHICKEN 
2 c. Ritz cracker crumbs
3/4 c. grated Parmesan cheese
1/4 c. chopped parsley
1 clove garlic, minced
1 or 2 tsp. salt
1/8 tsp. pepper
8 boned chicken breast halves (or 1 chicken, cut up)
1/2 c. butter, melted

Combine cracker crumbs, cheese, parsley, garlic, salt and pepper. Dip chicken pieces in butter and roll in crumb mixture. Arrange chicken in shallow baking dish. Pour remaining butter over chicken. Bake uncovered at 350 degrees for 1 hour. Do not turn chicken. Freeze remaining crumb mixture for use another day.

Hi...thanks for the yummy recipe. I used a bit less butter, & used Panko Bread crumbs instead of Ritz crackers. Otherwise the same. So very easy to make! Oh, a caution....I'm all into saving, re-using, etc. But don't save the extra breading/crumb mixture for another day... after it's been rolled in raw chicken!...even if you use it for chicken again. Either make it as said, & put it in a different container as you roll the chicken in it, & add new crumbs as you need them, or throw the extra out!
