VEAL PARMESAN 
2 lbs. veal cutlets
1 egg, slightly beaten
Salt to taste
Pepper to taste
1/2 c. Parmesan cheese
1 c. Progresso bread crumbs Italian style
Olive oil
1 clove garlic, chopped
2 c. tomato sauce
Mozzarella cheese slices

Preheat oven to 350 degrees. Dip veal in beaten egg, salt and pepper. Add small amount of Parmesan cheese to bread crumbs. Dip cutlets in bread crumb mixture. Cover the bottom of a baking dish with olive oil and chopped garlic. Place the veal cutlets on top. Bake and turn over when brown. Pour tomato sauce over the meat and top with Mozzarella cheese slices. Add remainder of Parmesan cheese. Bake for about 15 more minutes or until cheese melts. Yields 4-6 servings.
