CHICKEN OR VEAL PARMESAN 
This is a simple dish that is easy to prepare and does not take too much time to make. Accompany with a tossed salad and garlic bread.

3-4 boneless breasts of chicken
3 (8 oz.) cans tomato sauce
4-5 mushrooms, sliced
1/2 onion, chopped
1/2 green pepper, chopped
1 c. grated Mozzarella cheese
1/4 c. Parmesan cheese
1/2 tsp. each oregano, basil, garlic powder, Italian seasonings, salt
1/4 tsp. pepper
1 tbsp. olive oil
1/4 c. red wine

1. Saute sliced mushrooms, onions and peppers in olive oil for 5 minutes. Add tomato sauce, wine, 1 can of water and all the spices. Simmer for 30-45 minutes under low heat.

2. Wash chicken. Brown in 1 tablespoon oil. Set aside.

3. Preheat oven to 375 degrees.

4. In shallow baking dish 8 x 8 x 2 inches place 1/2 cup tomato sauce and spread around. Arrange chicken on top of sauce. Top with 1 1/2 cups tomato sauce and Mozzarella cheese and Parmesan cheese. Bake uncovered for 30 minutes or until cheese is light brown.
