FRESH APPLE NUT CAKE 
3 c. self-rising flour
2 c. sugar
1 tsp. cinnamon
2/3 c. vegetable oil
2 eggs
4 c. chopped apples
1/2 c. raisins (optional)
1/2 c. chopped nuts
1 tsp. vanilla
1/3 c. water

Heat oven to 350 degrees Grease and lightly flour 10" Bundt or tube pan. Sift flour, sugar and cinnamon into large bowl. Add oil, eggs and water. Beat 4 minutes on medium speed or 300 strokes by hand. Fold in apples, nuts and vanilla. Bake 1 hour.
