FRESH APPLE, RAISIN, NUT CAKE 
3 c. diced apples
2 c. sugar
3 c. all-purpose flour
1 c. raisins
1 c. chopped nuts
1 c. cooking oil
3 eggs
1 tsp. salt
1 tsp. baking powder
1 tsp. vanilla
1 tsp. cinnamon

Sift flour, salt, baking powder and cinnamon in large bowl. Mix all ingredients together, stirring until just blended.

Bake in a 10 inch greased tube pan lined at the bottom with wax paper. Preheat oven to 325°F and bake for 1 hour or until a toothpick inserted in center comes out clean.

Let cake cool for 10 minutes. Run a knife around edges to free cake from pan.

Remove cake from pan and peel off wax paper.

20 servings.

If you like make a glaze with xxxx sugar, flavored with cinnamon. This makes cake moist if put on while cake is warm.
