FRESH APPLE PECAN CAKE 
1 c. (2 sticks) butter
2 c. sugar
3 whole eggs
3 c. all-purpose flour, sifted
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. mace (found in spice section)
1 tsp. vanilla
3 c. chopped fresh apples
2 c. chopped pecans

Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition.

Mix and sift together flour, baking soda, salt, cinnamon and mace. Add gradually to creamed mixture.

Add vanilla. Stir in apples and pecans. Batter will be stiff.

Spoon into greased Bundt pan.

Bake at 325°F for 1 1/2 hours. Cook in pan 10 minutes before removing.
