SOUTHERN APPLE PECAN CAKE 
1 1/4 c. oil
1 tsp. salt
1 tsp. baking powder
3 c. apples, peeled and diced
2 c. sugar
1 tsp. baking soda
2 tsp. vanilla
2 c. flour
3 eggs
1 c. chopped pecans

Combine dry ingredients. Add oil, eggs and vanilla. Fold in apples and pecans.

Bake for 1 hour at 350°F in a greased and floured 9 x 13-inch pan.

Topping:

1 c. brown sugar, packed
1/4 c. milk
3/4 stick butter

Bring ingredients to a boil and boil 5 minutes. Pour hot over hot cake.
