FRESH APPLE NUT CAKE 
2 eggs
1 c. cooking oil
1 3/4 c. sifted self-rising flour
2 1/2 c. chopped nuts
3 c. pared chopped apples
1 tsp. cinnamon
1 tsp. vanilla extract
Cream cheese icing (see below)

Preheat oven to 300 degrees. Grease a 13 x 9 x 2 inch baking pan. Beat together eggs, oil and sugar. Add remaining ingredients and mix well. Pour batter into pan and bake 1 hour and 10 minutes. Let cake cool in pan. Frost with cream cheese icing and cut into squares to serve.

CREAM CHEESE ICING:

2 (3 oz.) pkgs. cream cheese
1/2 stick butter
1 box confectioners' sugar
2 tsp. vanilla

Combine all ingredients and beat to blend.
