FRESH APPLE-NUT CAKE | |
3 c. plain flour 1 tsp. baking soda 1 1/2 c. corn oil 2 tsp. vanilla 2 c. raw apples, finely chopped 1 c. chopped nuts 3 eggs 1 tsp. salt 2 c. sugar Grease and flour tube pan. Thoroughly stir together flour, salt and soda or put in flour sifter and sift. In large bowl of mixer at medium speed, beat together oil, sugar, eggs and vanilla. Gradually beat in flour mixture until smooth. Fold in apples (no water; beat the apples for moisture) and nuts if preferred. Bake at 350°F for 1 hour or until cake tester placed in center comes out clean. |
